Poor Man's Chicken Rice
My mom used to make a simpler version of this same recipe every once in awhile when she needed a quick meal on a shoestring budget. You may certainly use her method (cream of chicken soup stirred into 2 cups cooked rice) but I like to add a little depth with my baked seasoned chicken, onion, and some parsley for color.
Step 1 is the Brine, Season, Rest method. It can be used for nearly any recipe and adds some spice to this simple dish. ENJOY!

*Because the Cream of Chicken soup can be a little salty, you may like to opt for a Low Sodium soup and/or unsalted butter when used. A splash of milk over the cooked rice before combining other ingredients will also help.
